Greek Layer Dip

I love Greek food, and this has become one of my favorite recipes. It's super simple and you can omit or add toppings as you like. Besides the cream cheese and all the pita chips you will eat with it, it's pretty healthy and is always a hit at parties.

       Ingredients:
8oz cream cheese
8oz hommus
1 Tbsp lemon juice
1 tsp greek seasoning
2 cloves garlic minced
1/2 cup tomato diced
1/2 cup cucumber diced
1/2 cup kalamata olives chopped
4oz feta
2-3 scallions sliced thin

Small dice the tomato and cucumber. Thinly slice the scallions. Rough chop the olives and mince the garlic. Slice the lemon in half.

Save the ends of the scallions and place in a cup of water to regrow them! I do this so I will always have some around.

In a small bowl mix cream cheese, minced garlic, lemon juice and Greek seasoning.  You can also add dill or use it instead of the Greek seasoning.

Spread the cream cheese mixture on the bottom of your dish. I usually use an 8x8 baking dish.  I was making this at our cabin and only had a plate but it worked just fine.

Next spread the hommus on top of the cream cheese.

Now add the toppings however you'd like.  I always start with the cucumbers and tomatoes.

Then crumble the feta on top.

Last,  add the kalamata olives and scallions.

Serve with pita chips and enjoy!
