Simple Honey Glazed Carrots


 These carrots are an easy, healthy side that can be prepared in advance and reheated for meals all week long.  I made a big batch because I'm trying to use up a 10 lb bag of carrots I bought at Costco last week.

First peel the carrots.
Chop off the ends.
 Slice diagonally or into circles.
 Melt butter in a large pan on medium heat.
Add carrots to the pan and stir.
 Add salt, pepper and honey.
Cook about 5 minutes stirring occasionally.
 Add enough water to almost cover carrots and let it come to low boil.
 Cover and let cook for about 10 minutes or until carrots are tender.
 Remove lid and continue cooking until the glaze reduces and thickens.
 Serve immediately or let cool and store for later!


Ingredients:
15 carrots
Tbsp butter
2 Tbsp  honey
salt & pepper to taste
